Perhaps a bit of background is in order. To answer questions such as, "why are you doing this?"
The processed potato industry is going through rapid change, compared to conditions a decade ago. So many pressures: Raw material costs are going up, availability can be iffy in any region. Labor is getting more expensive and difficult to acquire and retain. Product quality expectations of customers are increasing. Demands to minimize environmental impact are continuous. Not to mention wild fluctuations in currency exchange and interest rates (e.g., the euro has essentially doubled vs. the US dollar in less than a decade).
With all this change, how does the industry continue to make money? That is why we are all here, right?
This blog is intended to provide a forum for discussion of ideas surrounding potato processing. Ideas clarifying the status quo. Ideas of areas to improve or even turn upside down. Ideas about how different parts of the processed potato community can work together so we all make more money (or, perhaps even stay in business!).
So: here we go! Come along for the discussion, it will be fun!
